I often find myself rummaging through my pantry, staring at the shelves full of ingredients, trying to come up with the perfect side dish to complement whatever main course I am preparing. It often can be a bit of a struggle to find something that is both simple to make and flavorful enough to stand out, especially when I am juggling multiple dishes at once. The last thing anyone wants is a side dish that requires a ton of attention or time, which is why I’ve come to rely on a few go-to recipes that are both delicious and pleasing.
That’s why these roasted red potatoes are my go-to. Being crispy on the outside and tender on the inside, they’re packed with delicious garlic and herb goodness. Not to mention they are SO easy to make.

Ingredients
Recipe:
1 Package of Small Red Potatoes
2 TBS Olive Oil
Dried Parsley
Onion Powder
Garlic Powder
1 TSP Sea Salt
Black Pepper
1 TBS Minced Garlic
Preparation
Step 1: Halve the red potatoes, placing them into a bowl. Then add in your olive oil, parsley, onion powder, garlic powder, sea salt, pepper and minced garlic. Tossing to evenly coat.
Step 2: Spread evenly on your baking sheet and then pop those into the oven at 425F for about 20-25 minutes. If you use anything larger than the small petite potatoes you may find that the cooking time will take longer.
Step 3: Take them out of the oven, allowing them to cool for about 5 minutes and enjoy!
