Description
Intertwining the flavors of summer and a classic pasta dish is simple. This diverse pasta dish can be prepared in just 20 minutes!

Ingredients
1lb angel hair pasta
Salt and pepper
Extra virgin olive oil or avocado oil
1 lb peeled and deveined shrimp
1/2 red onion, chopped
5 garlic cloves, chopped
1 tbs dry oregano
1/2 tsp red peper flakes
1 cup dry white wine
1 lemon, half zested & half juiced
large handful of chopped parsley
1 1/2 cup cherry tomatoes, halved
parmesan cheese, grated for topping
Preparation
Step 1: Cook the pasta in salted boiling water according to package instructions. Reserve 1 cup of the pasta water.
Step 2: While pasta is cooking, heat a large pan with 1tbs extra virgin olive oil over medium-high heat until the oil simmers. Add the shrimp to the pan and cook each side for 2-3 minutes until it turns pink. Season with salt, pepper and red chili flakes. Transfer the shrimp to a side plate for now.
Step 3: In the same pan add a bit more of oil, if needed. Reduce heat to medium-low. Add onions, garlic oregano and red flakes. Cook for 1 to 2 minutes, stirring constantly. Add the white wine to the pan and scrap up any pieces of garlic and onions. Cook the wine for 1 minute, reducing the heat to low and then add the lemon juice and lemon zest.
Step 4: Add the chopped parsley and tomatoes to the pan, tossing for about 30 seconds. Season with salt and pepper.
Step 5: Add the cooked pasta to the pan, and toss to coat. Add some of the pasta water if you need.
Step 6: Finally, add the cooked shrimp and sprinkled the grated parmesan cheese and red pepper flakes. Enjoy!
