Apple Pork Chops

Ingredients

  • 2 tbs avocado oil

  • 2 bone in pork chops

  • 1 medium yellow onion

  • 3 garlic cloves, chopped

  • 1 inch fresh ginger, grated or chopped (you can also use 1 frozen cube)

  • 2 teaspoons cumin seeds (optional)

  • 1/2 tbs red chili flakes

  • salt and pepper

  • 1/2 cup apple cider

  • 2 tbs apple cider vinegar

  • 4 sprigs fresh thyme

  • 1 honey crisp apple

  • 2 tbs butter

Preparation

Step 1: Preheat your oven to 450 F


Step 2: In a large cast iron skillet, heat the avocado oil on medium heat. Season the pork chops with salt and pepper. When oil starts to simmer, add the chops and sear on both sides about 5-6 minutes each. You can sear shorter about 3 minutes, but I prefer a crispy brown sear on my chops. Transfer to a plate once they are browned to your preference.


Step 3: In the same skillet, combine onion, garlic, ginger and cumin. Cook those, stirring occasionally until the onion and garlic is fragrant, about 4 minutes. Pour in the cider and vinegar, scrapping up any browned bits from the bottom of the pan. Increase the heat to high, bringing the liquid to a boil then reduce to low.


Step 4: Place the pork chops back into the skillet. Add thyme, and red pepper flakes and add your cut apple slices around the pork. Transfer skillet to oven and roast for about 12-15 minutes.


Step 5: Remove the skillet from the oven. Add the butter and let it melt over the pork chops, about 5 minutes.


Step 6: Cut and serve!
